Red & white zucchini boats for July 4th

The Fourth of July usually means grilling lots of meat on a grill or two (or four like I have in my outdoor kitchen) but don’t forget your vegetarian family members or friends — here’s a great stuffed zucchini boat you can make on the grill as well.

It already has two colors for the 4th, kudos if you can find a way to add something blue — maybe the plates you serve it on?

But back to the latest recipe I found on a site called SimplyItalian Cooking. The ingredients:

  • Medium zucchini
  • Onion
  • Tomato
  • Garlic
  • Breadcrumbs
  • Italian cheese (Romano or Parmesan)
  • Olive oil
  • Basil
  • Salt and pepper (optional — leave out the salt)

Zucchini lovers rejoice — here’s 10 recipe options

Zucchini is one of my favorite vegetables to grill. Normally I just spray on some olive oil and some Italian spices and leave it at that, eating it as a side dish for such main courses as swordfish, tilapia, salmon and Fourth of July cookout favorites.

So I was excited to see a recent New York Times Cooking headline: Our 10 Most Popular Zucchini Recipes. I expected there would be some in there that are not low-salt, low-fat or low-sugar and I was right. Continue reading “Zucchini lovers rejoice — here’s 10 recipe options”

Swordfish and zucchini on the grill, a great summer cookout option

Grilled fish are a great summer alternative to over-eating fatty beef. I often grill salmon, but last night decided to try grilling some swordfish we just bought instead.

I marinated one piece in Mrs. Dash’s salt-free teriyaki sauce while the other got a dry spice rub (my wife’s choice). I did the fish on a charcoal grill to impart the smokey flavor of the coals.

Grilled zucchini was the side dish for our meal. I cut the zucchini into small circles and covered them with olive oil and Italian spices. I sprayed the grilling pans with olive oil as well to prevent sticking. Those went on my gas grill where I find it easier to regulate the heat levels to get a nice even cook.
