Some salt substitute techniques. I make my tomato sauce without salt and really never miss it, I compensate with garlic.

It’s funny to me that one of the few food memories that I have of my Italian Grandmother is her spaghetti sauce recipe that she made the family when I was little.  The thing about it that really stood out to me is that it didn’t taste right to me.  Everything to my young mind seemed to be there, tomato sauce, meat, pasta, cheese…but it just tasted mostly bland.  What I didn’t know at the time and was informed of several years later is that Grandma had high blood pressure and was on a salt restricted diet so she cooked the food that she could eat, therefore bland to the rest of us.  Knowing the tricks that I know now I believe that I could’ve salvaged that spaghetti sauce and many other dishes with little cheffy tricks that aren’t salt.

Clean Eating Crock Pot Chicken: tried it, loved it

I recently reblogged a recipe I saw on another site, NYC Fit Food Fashion, called clean eating crock pot chicken. I decided to try making it myself, without the salt called for in the original recipe and using a very low-sodium chicken stock.

The result was a wonderfully tasty dish and the most moist white meat chicken I think I’ve ever made at home. For someone who hates dry chicken, this dish is a God-send.

Salt-free spices are a must-have for your kitchen

With salt literally off the table since my 2012 angioplasty, finding spices and marinades that also are salt-free has become a must. Luckily, I live near a wonderful spice store, The Spice House, which has a full array of salt-free spices.

I particularly like its blends that supposedly reflect various ethnic cuisines. My favorite is called Sunny Greek Islands which includes oregano, marjoram, garlic, lemon peel and red wine vinegar among others. I’ve used it on fish and poultry.
