Grilled chicken recipe for the 4th? Try this rosemary chicken

Grilled chicken recipes are everywhere online, but here’s one that’s salt-free, and low-fat that actually taste great. I enjoyed writing about it last year as one of my healthy recipe choices. So I’m revisiting it for this July 4th grilling season.

It starts with chicken breasts tenders, cut into cubes. Add olive oil, lemon juice and Italian spices, then use rosemary spriggs as the skewers for your chicken instead of metal or wooden skewers. Lentil-crusted salmon: wild for me, maybe perfect for you?

I regularly receive e-mailed recipes from Blue Apron, a home delivery food site, and find an interesting mix of ideas. I wrote recently about matzoh-crusted chicken, which sounded like a good low-salt alternative to traditional breading for chicken.

Another Blue Apron recipe that caught my eye was one for lentil-crusted salmon. Honestly, I may not try to make this one because it’s an Indian dish and the spiciness of much Indian cuisine I’ve tried is too much for my stomach. Matzoh-coated chicken: a low-salt recipe from Blue Apron

Most recipes include salt, so I often modify them to remove it. But I was happily surprised to come across a recipe for chicken that uses salt-free matzoh as a coating instead of high-salt breadcrumbs. Salt is in the recipe, but I would simply leave it out. The recipe comes from Blue Apron, which is a food home-delivery service.

Click through to this Blue Apron recipe page to see not only how to make this, but great photos showing you a step-by-step guide. I’ve written about matzoh pizza I made, and served guests. It’s a great low-salt alternative to traditional pizza. Getting back to the new chicken recipe, however.

The basic ingredient list is:
2 Chicken Cutlets
½ Cup Matzoh Meal
1 Fennel Bulb
1 Golden Beet
1 Red Onion
1 Navel Orange
1 Bunch Parsley
2 Tablespoons Red Wine Vinegar
2 Tablespoons Sugar
¼ Cup Dijon Mustard

The orange, fennel, onions and beets go into a side salad for the chicken. There’s mention of a pickling liquid that does include salt, I’d try to leave it out and see how it tastes. I eat fennel regularly, it doesn’t need salt to bring out its natural flavor.

I plan to try this and report back on how it goes. Another note, there is sugar in this, if you’re watching your sugar, consider reducing or eliminating it.

Clean Eating Crock Pot Chicken: tried it, loved it

I recently reblogged a recipe I saw on another site, NYC Fit Food Fashion, called clean eating crock pot chicken. I decided to try making it myself, without the salt called for in the original recipe and using a very low-sodium chicken stock.

The result was a wonderfully tasty dish and the most moist white meat chicken I think I’ve ever made at home. For someone who hates dry chicken, this dish is a God-send.

Chicken parmigiana for everyone: here’s a low-salt recipe

Our 12 days of Christmas menu guides ends with a new twist on an old favorite for me, chicken parmigiana, but made in a low-salt, low-fat way.

Start with fresh chicken breasts, egg whites, panko breadcrumbs and no-salt-added marinara sauce.

Use panko breadcrumbs to cut salt, low- and no-fat cheese, and egg whites rather than whole eggs to coat the chicken breasts before breading. Bake rather than fry and you’re on your way.

I hope you’ve enjoyed these menus for the holiday season. Comments have been great for them and viewership has been solid, so I hope they’ve helped people get through the holiday food season without going off their low-salt, low-fat, low-sugar diets, too much.

Rosemary chicken, a nice change of pace

My 12 days of Christmas low-salt, low-fat, low-sugar recipes have been heavy on Italian accented dishes so far, you can see my heritage at work in those. So here’s a change of pace today, a simple rosemary chicken dish that can be served with a side of green beans or even a peppers and onion mixture to add some additional flavors.

The original recipe comes from the Food Network, but I’ve left out the salt to reduce the sodium content. I made this as a summer outdoor recipe this past year, but you can just as easily make it in the oven inside, or grill the skewers on your stove should you have a grill top there.

Rosemary chicken: a nice way to add flavor to chicken breast

Eating chicken breast can get boring fast given that white meat, while the lowest-fat part of the chicken, also is the driest. I tend to cook it covered with tomato sauce or some other ingredient to add some flavor to it.

So, searching for new recipes, I was interested in trying a recipe I saw in People magazine from TV personalities Bill and Guiliana for chicken skewered on sprigs of rosemary. It all tuned out well and seemed to be a hit with Sunday dinner guests recently. The only tricky part of the recipe is finding long rosemary branches.
