New guidelines for safer fish consumption, will these be the last?

The Food and Drug Administration and the Environmental Protection Agency recently put out new guidelines regarding fish consumption that includes this handy infographic showing which fish have less mercury (that’s the interpretation of healthy, or best choices, here).

The chart is aimed especially at pregnant women and parents but we all should be aware of mercury content in the fish we eat. The FDA and others position fish as a healthier alternative to fatty meats, but mercury content is the wild card here that throws a wrench into all of that. Garlic-herbed scallops — hold the butter, still delicious

Recipes cards at supermarket fish and beef counters seem a bit old-school, bu I still like to pick them up when looking for new ideas to meet my low-salt, low-fat, low-sugar diet requirements. I recently grabbed one for garlic-herbed scallops because I knew I had a package of scallops in my freezer and hadn’t been sure how to cook them.

I love garlic, herbs are fine, so I thought this would be worth a try. When I looked at the recipe, I saw it included butter and salt. I decided to leave those out. The result was a still very tasty olive-oil-based basting sauce that conveyed a wonderful taste to the scallops. Continue reading “Garlic-herbed scallops — hold the butter, still delicious”

A fun seafood restaurant in food-heavy Highwood, Il.

Highwood, a far northern Chicago suburb, has been known traditionally for its Italian restaurants but the foodscape there is becoming much more diverse these days. Lucky Fish Deli is just one example, a fun seafood shack that can make you feel like you’re in some sleepy East coast fishing town. Indeed, the decor was inspired by a trip the owner took to Maine, according to one story I’ve read.

The seafood was excellent. I went with a half-dozen oysters, which came out clean, fresh and cold as they should be served. I think the waiter said they were bluepoints. Some simple, yet tasty, salmon recipes from Costco Connection

Low salt, low fat and low sugar recipes are the main reason readers come to this site, so I’m always on the look-out for more great, and easy to make recipes. I found these two salmon recipes in the May issue of The Costco Connection, Costco’s magazine.

In another sheet of aluminum foil, place your four pieces of salmon and separate with aluminum foil. Then rub in marinades for each.

One is for grilled salmon with grilled vegetables. I’ve done variations of this many times, either grilling veggies on skewers or in big pans. This calls for putting zucchini, pepper and onions in foil, seasoning with basil, garlic and olive oil and then just grilling the packet for five minutes. What could be easier? Try scallops for a taste of seafood that doesn’t overwhlem

Seafood of all kinds has become a larger part of my diet since my 2012 angioplasty, but sometimes I get tired of making fish like salmon, tuna, swordfish, trout, walleye and others I’ve written about here.

Scallops are great for when I want just a taste of the sea without drowning in it. True, they are very expensive, at least in my Midwest world. So they’re definitely not something to pig out on. A flavorful take on cod, but is it low-sodium?

Cod is a fairly bland fish, probably most familiar to you as the fish in the typical fish and chips dish in which you taste the breading more than the fish itself. As you can tell, I’m not a big cod fan, but I came cross this recipe recently that gave a nice flavor boost to the white fish.

The recipe calls for coating the cod with a mixture of panko breadcrumbs, artichoke hearts, Parmesan cheese, olive oil, garlic, lemon juice, basil and pepper. It also calls for adding salt but I did not. Fish does not need salt, period, in my opinion.

You mix all those ingredients and coat the cod fillets with it, then bake in a 400-degree oven for about half an hour.

The salt challenge in this is the artichoke hearts. Most canned ones have 4oo or more mgs per serving. with two-three servings in a can. I found one imported brand that had 240 mgs times three servings, or 720 mgs in the can. I used about a third of the can in the recipe, so 240 mgs of sodium spread over the four cod fillets, of which I ate two.  Continue reading “A flavorful take on cod, but is it low-sodium?”

Tilapia — with a little chili kick

Tilapia is one of my go-to fish choices these days because its quick to make. It’s not supposedly as healthy for us as salmon or other good-fat fish, but it can be made in lots of ways, check some of ym past recipes for it on our recipe page.

An arctic char recipe for Christmas time, or any time

Fish of all types has become a bigger part of my eating routine since my 2012 angioplasty, so I’m always open to new varieties. Arctic char is a fresh water fish that started making its way here in the 1990s from northern climes in Europe and Iceland.

It’s a bit of a cross between trout and salmon, with less fat than salmon, although it has a resemblance in terms of its somewhat pink color. It reminds me a bit of the steelhead trout I’ve blogged about here in the past. Continue reading “An arctic char recipe for Christmas time, or any time”

Evanston’s Celtic Knot surprised me with a nice salmon salad

The Celtic Knot is along-time fixture in my Chicago suburb of Evanston but I have not gone there in the three years since my angioplasty because the place advertises that it specializes in pub grub — exactly the kinds of foods I can no longer eat because they tend to be high in salt and fat.

So I wasn’t sure what I would eat there when I went to a recent event held in a private room at the downtown Evanston restaurant. I brought along my own oil and vinegar packets just in case those simple salad condiments weren’t available.
