Veggies for me: a major change in my diet

Lose It! loves sending me badges, I’ve written about them before and seem to get lots of reader attention when I do. So here’s another one I recently received.

The Green Giant badge signifies that “Your appetite for veggies rivals the Green Giant himself,” Lose It! writes me. I’m assuming General Mills, which owns the Green Giant brand, has some involvement in this.

That aside, how I eat has changed completely over the past 18 months since my angioplasty. Not only am I eating more vegetables, but they represent a larger portion of each meal for me. I generally eat noting but lettuce for lunch since most restaurant food is too high in fat, sodium and sugar for me. That’s been the major change in my eating habits. At home, I’m cooking more and being sure to include vegetables in every meal rather than skipping them for a quick pizza or burger some nights like I once did.

Check my recipe page for some interesting approaches to veggies.
