I’ll be linking to and discussing recipe favorites every day for the next 12, starting today with a recipe I wrote about recently and just made myself this past Sunday, grilled chicken with strawberries and pineapple salsa.
I suggested when first reviewing this recipe that you could substitute Mrs. Dash salt-free taco seasoning for the salt-free steak seasoning called for in the recipe. That worked out really well for me, giving the chicken a nice flavor. I rubbed the seasoning on both sides of each breast I made.
One word of advice though, open your windows before you grill this chicken on your stove. I didn’t and our vent does not vent outside, so my kitchen quickly filled with smoke, set off the smoke detector (which is tied into our home alarm system) and brought the fire department to my door.
I’d change the recipe up by quickly grilling the breast to lock in juices, then finishing by baking them in the oven. Using thin-cut breast would help as well, our plumb ones did not cook through on the grill before the smoke alarm went off.
The pineapple and strawberries combined in the salsa was a wonderful counter-point to the chicken itself as was the lemon juice I applied liberally to the chicken while cooking and on my plate (I hate dry food).
