Grilling for the 4th of July — try these salmon skewers

This has been grilling week on the blog, with posts about a guide to grilling fish and another about a grilled salad. Here’s another fun idea for your 4th of July grilling weekend, rosemary salmon skewers with cherry tomatoes.

This recipe comes from the website of former Biggest Loser trainer Jillian Michaels. I sometimes quibble with what she calls healthy eating, but this recipe looks good, once you omit the salt, that is. It’s not needed and will only add to your salt overload, I’d leave it out.

That said, here’s the ingredient list:

  • 2 teaspoons fresh rosemary, minced
  • 2 teaspoons extra virgin olive oil
  • 2 fresh garlic cloves, minced
  • 1 teaspoon lemon zest, freshly grated
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 pound wild Alaskan salmon fillet, center-cut, skinned, cut into 1-inch cubes
  • 1 pint organic cherry tomatoes

Lemon is one of my favorite cooking flavors. And rosemary is always a nice addition. If you’ve never cooked with rosemary, you should try it. Here’s a description from one site that writes about it:  “Rosemary has a unique pine-like fragrant flavor that is balanced by a rich pungency, a combination that evokes both the forest and the sea.”

How can you resist that?

Apparently rosemary also has health benefits, although I take all talk about food health benefits with a grain of doubt (not a grain of salt because I’m cutting salt from my diet). Here’s what that same site has to say about rosemary’s health benefits:

“Rosemary contains substances that are useful for stimulating the immune system, increasing circulation, and improving digestion. Rosemary also contains anti-inflammatory compounds that may make it useful for reducing the severity of asthma attacks. In addition, rosemary has been shown to increase the blood flow to the head and brain, improving concentration.”

Really? Who knew? As I said, I find all that hard to believe, but i like the taste, so rosemary your salmon and have a great 4th!
