A no-salt Easter side dish — asparagus with balsamic tomoatoes

Easter is almost upon us, so you’re likely looking for some no-salt, no-sugar, no-fat recipes to put on your holiday table. We’ve written about Easter dinner before, simply click here to see that lineup. And here’s another dish we just came across, asparagus with balsamic tomatoes, courtesy of Cooking Light and Myrecipes.com

Asparagus with balsamic tomatoes.

The ingredient list is fairly basic, leave out the salt though (as usual):

Ingredients

1 pound asparagus, trimmed
2 teaspoons extra-virgin olive oil
1 1/2 cups halved grape tomatoes
1/2 teaspoon minced fresh garlic
2 tablespoons balsamic vinegar
1/4 teaspoon salt [leave it out]
3 tablespoons crumbled goat cheese [use no-fat feta instead]
1/2 teaspoon black pepper

You simply cook the asparagus as usual then mix everything else up in a  fry pan and pour it over your asparagus.

We eat asparagus a lot in our house, so I’m always looking for new variations on how to prepare them. I’m hoping to try this recipe very soon. Click here for all the details for it.
